Lingonberry sour cream coffee cake

This lingonberry coffe cake made from sour cream is so tast, you will have your guests begging for more. If you don’t eat it all up yourself before they arrive.

Ingredients
  

Streusel Topping

  • 1 cup light brown sugar
  • 1 +1/2 tsp cinnamon
  • 1 +1/2 sticks cold unsalted butter cut into small pieces
  • 1 +1/2 cup chopped pecans optional
  • Salt to taste

Cake

  • 1 1/2 cup flour
  • 1 stick butter
  • 1 +1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup white sugar
  • 2 large eggs
  • 1 +1/2 tsp vanilla
  • 1 cup sour cream
  • 1 cup Felix lingonberry jam

Glaze

  • 1 cup powdered sugar
  • 1 tbsp whole milk
  • 1 tbsp Felix lingonberry jam

Instructions
 

  • Preheat oven to 350°F.
  • Mix all ingredients for the topping. Put in refrigerator.
  • Mix all ingredients for the cake and pour the batter into greased 9x9" pan or cupcake tins. Sprinkle top with the streusel topping and bake for approximately 50 minutes.
  • While the cake bakes, mix ingredients for the glaze. Right after the cake is done baking, take out and drizzle glaze over the warm cake.
